First let me start by introducing myself! My name is Rosemarie (Rose for short), and Mike Nguyen happens to one of my very best friends! About a month or so ago, he asked if I would like to write a guest post based on my experiences with healthy living and I was absolutely thrilled that he would even ask me to do so, so here I am!

I have changed my diet on numerous occasions in the last seven years or so.. From being Raw Vegan for a year, Strictly Vegan for two years, Lacto-Vegetarian for three and a half years, Pescatarian for four months, to now, Paleo Ketogenic. I went from eating a very carbohydrate rich diet as that is what a vegetarian diet mainly consists of. The high carbohydrate load was great when I was a hardcore distance runner or when I was a very avid hiker, but when you aren’t living your life that way constantly, it can actually be a detriment to your health and for me, it was.

Slowly but surely, I became pre-diabetic and insulin resistant. It was a shock to me, as I thought I was doing the right thing, diet wise. Soon, I realized I needed to start cleaning up my diet even more so and began to eat wild caught fish to avoid eating all the soy and processed meat-free foods I had been eating in abundance. With becoming pre-diabetic, I took it upon myself to go on a Ketogenic Diet and quit eating grains, gluten, and root vegetables all together. It was working okay, or so I thought, but then I received my results from a food sensitivities panel my naturopath ran for me. I soon learned that I had become EXTREMELY sensitive to whey, casein, mozzarella, cheddar, cow milk, goat milk, eggs, whole wheat, and almonds.. All of which were my main staples while being vegetarian. For years, I had an inkling that I may be sensitive to gluten and dairy, and here was my confirmation! It was definitely time for change!

About three weeks ago, I began eating meat again. By meat, I mean QUALITY MEAT! Only humane and pasture raised grass fed AND grass finished beef, heritage pork, and some organic chicken! I was left with very few food options and as drastic of a change it was for me, it was most definitely a good one. I now eat a 70-80% fat diet, with moderate protein, and 25 grams of net carbs daily. My body has never been leaner and my brain has never been happier. My body no longer runs on carbohydrates and is now entirely fat adapted. Instead of my body running on glucose, it now runs strictly on ketones, brain food.

On July 29, 2016, I was 125lbs, pre-diabetic and insulin resistant. Today I am 113lbs with zero inflammation while steadily keeping my blood sugar in the 80s meaning NO MORE PRE-DIABETES!

Life is short. Life is beautiful. Six weeks ago, I decided to really take charge of my life, to stop caring about the opinions of others regarding my diet, and I have never been happier and especially healthier! Change is good, and I am glad I was open enough to stay flexible in doing what’s best for me and my body. Love yourself to know the difference! Love yourself enough to care!
