Ground Turkey Lettuce Wraps with Roasted Red Pepper Sauce
Gluten-free lettuce wraps made with ground turkey thigh meat topped with a flavorful, easy-to-make sauce.

Turkey (filling)
  1. On medium to high heat, add butter to pan on stovetop.
  2. After pan has heated up and butter has melted, add chopped onions and sauté for a few minutes. If browning starts to occur, turn down heat or remove.
  3. Add chopped carrots and continue to sauté those and onions for 2 more minutes.
  4. Add ground turkey thigh meat and continue to cook until all pieces are thoroughly cooked. Add fresh minced garlic, spices, salt, and pepper at this time.
  5. When turkey meat is cooked, remove from heat.
Roasted Red Pepper Sauce
  1. Open jar of roasted red peppers and add 3 peppers to blender, VitaMix, or Nutribullet.
  2. Add the olive oil and blend until peppers are blended entirely. This should only take less than 30 seconds.
Lettuce Wraps
  1. Place about 4 pieces of lettuce (romaine hearts) on plate.
  2. Spoon a few spoonfuls of the cooked turkey meat onto each piece of lettuce.
  3. Spoon about a tablespoon worth of red pepper sauce onto each lettuce wrap.
Recipe Notes

Feel free to swap out ground turkey for chicken or beef if turkey is not your favorite protein choice. I personally find ground turkey thigh to be less dry than breast, that is why I buy the thigh. Sometimes when I have more time I’ll chop up parsley or cilantro and toss that into the turkey mixture as well.

The sauce is so easy to make and full of flavor and color! I usually have leftovers when I make this sauce and love to pour it over anything for additional flavor.
