Ingredients:

1 small-medium head of fennel

2 zucchini

1/4 of red onion

1/2 cup of walnuts

3-4 tbsp. olive oil

3-4 tbsp. apple cider vinegar

1/2 tsp. dill

sea salt and pepper (to taste)

Preparation:

Using a mandolin slicer, slice fennel, zucchini, and onion into fine, thin slices.

Toss all ingredients with walnuts, olive oil, vinegar, dill, salt and pepper and serve.

Serves 3-4
