
I discovered a new leafy green this week — escarole, a close relative to the endive. Less bitter in flavor than the endive and frisee, it makes for a perfect salad green. Try replacing your iceberg lettuce with this more nutritious green.
Health Benefits:
– good source of Vitamin A and C
– low in calories, high water content and fiber
– bitter greens and other bitter vegetables help to support gall bladder and liver health by promoting a healthy bile flow
For a simple salad, try tossing together:
- escarole
- walnuts
- shallots or red onions
- goat cheese (or your favorite)
- olive oil & apple cider vinegar dressing (always home-made)
I’ve also been told you can cook with it: lightly sauté it to bring out a more sweet flavor. I’d assume lightly sautéing with some butter and garlic would taste great or slice thin and add to soups.
