Ingredients:
4 small-medium sized golden beets, raw
1/4 red onion
2 lemons
2 cloves garlic
handful of parsley
3-4 tbsp. olive oil
sea salt and pepper (to taste)
Preparation:
Using a peeler, peel skin off of beets.
Using a mandolin slicer (see picture of the one I use), cut beets in half and slice.
Do the same with the onion.
Finely chop parsley and garlic.
Juice the lemons.
Place all ingredients in bowl and mix well with lemon juice, olive oil, and salt and pepper.

Variations:
- If the beets are too tough for your liking, try steaming them first. Let them cool, slice and make salad.
- Try substituting parsley with cilantro.
- Omit garlic
- Use apple cider vinegar instead of fresh-squeezed lemon juice for dressing
Health Benefits
Beets — great source of folic acid, potassium, and dietary fiber.
A great source of antioxidants and some pigments that help support healthy detoxification.
Onions — a good source of chromium, a mineral which plays an important role in helping to balance blood sugar and vitamin c.
Contain anti-inflammatory compounds and sulfur compounds which help support cardiovascular health.
Parsley — an excellent source of vitamin k, c, and a and antioxidants.
Garlic — the health benefits of garlic are far too numerous to list here, but garlic is extremely cardioprotective to say the least.
Lemon juice — lemons are a great source of vitamin c.
Olive oil — helps maintain healthy cholesterol levels and protects the arteries.
