I’m going to keep it quick & simple today by sharing some easy juice & smoothie recipes that I created recently. I actually used my Nutribullet for both of these, so fiber is present in both of these; not a true fruit “juice”, but healthier for that reason, in my opinion.

Tangelo Ginger Smoothie

 

 

 

 

 

 

Ingredients:
– 1 minneola (a type of tangelo)
– fresh ginger (amount the size of thumb, with no skin)
– full fat coconut milk (1/4 cup)
– water (1/4 cup)
– ice (6-8 cubes)

Throw all ingredients in blender/Nutribullet/Vitamix and give it a good blend. This five ingredient juice/smoothie was a little sweet, a little tart, and a little spicy; the perfect combo of flavors for me. Besides benefiting from the fiber from the tangelo by blending it whole (complete with pulp) rather than just drinking the juice, this recipe also balances out the sugar with a healthy dose of fat from the coconut milk.
More balanced = better for blood sugar levels


Pomegranate Apple Juice

Ingredients:

– 1/2 pomegranate (just the seeds)
– 1/2 green apple
– 1/2 cup cold sparkling water (I used San Pellegrino)

Blend all ingredients together and it should yield a frothy head like the picture above. Keep in mind because the fiber from the pomegranate seeds were used, it will impart a gritty/fibrous feel to the drink. You may not like this so if that’s the case, you could juice the seeds instead. I’m a bit lazy to be honest, so I’d rather blend them all together while also taking advantage of the benefits of the seeds: rich in fiber and polyphenols (antioxidant compounds). The sparkling water added to this drink gives it a nice fizzy finish. After making this I thought it could also taste great with ginger; give it a try and let me know!
